The farm

Retracing the ancient Via Francigena, the route followed by medieval pilgrims heading towards Rome, you reach one of the most unique and unspoiled little towns in the heart of Tuscany, San Gimignano.
It is here - in the midst of vineyards, olive trees and century-old oak trees – that Fattoria Abbazia Monte Olivetolies. The present-day estate owes its name to the Abbey built in 1340 by Olivetan monks, who chose it as an ideal place in which to grow wine grapes and olives.
The origins of wine culture here seem to be lost in the mists of time. Indeed, for centuries, the Abbey’s gently sloping vineyards have produced one of the white wines that has been famous ever since ancient times and whose praises have been sung by illustrious poets, Dante Alighieri above all: Vernaccia di San Gimignano.
The charm of this almost fairy-tale-like place and the story behind such a distinguished wine enchanted the Zonin family which, in 1982, decided to purchase a little piece of history and beauty in this spot.
Today Fattoria Abbazia Monte Oliveto consists of 35 hectares of land, of which 20 are devoted to cultivation of the indigenous Vernaccia grape variety; 10 hectares are planted with olive trees and 5 are of old ilex and cypress trees.
Only typical local products made with loving care – such as extra virgin olive oil and acacia honey – come from this timeless plot of land. But the area’s undisputed flag-bearer remains wine. Indeed, this estate produces exclusively Vernaccia di San Gimignano, the first wine in Italy to obtain Denominazione di Origine Controllata status (in 1966), and which later, in 1993, gained the superior accolade of Denominazione di Origine Controllata e Garantita.

The estate’s strategic position allows you to reach the old town of San Gimignano easily on foot and, at the same time, the privacy that the property affords enables you to relax and enjoy a personal relationship with its special aura.
The estate’s agriturismo is made up of seven comfortable apartments, decorated in typical Tuscan rural style; they are spacious, with wood-beamed ceilings and terracotta floors. All offer breathtaking views of the towers of San Gimignano and of the surrounding hills, with their simply decorated parish churches, ancient chapels and little medieval villages.

Also, in and around the swimming pool in the center of the large garden, you can relax and enjoy spiritual harmony with the colors and scents emanating from the surrounding countryside.de

Activities and surroundings

Every week the estate organizes tours revolving around taste and exploring the local area. These activities include a walk through the vineyards, a winery visit and a tutored tasting of our wines accompanied by typical local food products, such as extra virgin olive oil, cold cuts from Cinta Senese pigs, Pecorino cheese and finocchiona (fennel-flavored salami).
This is a unique opportunity, not only to try the wines made atFattoria Abbazia Monte Oliveto, but also to learn some useful tips and little curiosities about thetechnique of tasting, whilst immersing yourself in a sea of history such as only San Gimignano can offer.
Theagriturismo’s pool, surrounded by the greenery of the olive trees and of the vineyards, is available for guests to enjoy long, regenerating swims and relaxing hours of sunbathing.
The wonderful countryside all around you offers a unique and atmospheric environment in which to make excursions on mountain bikes or on foot, selecting one of the numerous hiking routes in the zone.
The leisure activities available near the Estate also include clay tennis courts, riding stables and two golf courses.

Products

At San Gimignano, as in the rest of Tuscany, there are lots of fascinating records of the existence, ever since ancient times, of populations devoted to the production of wine and olive oil.
In fact, first the Etruscans and then the Romans selected this area because of its unique, unmistakable characteristics, which made it even then one of Italy’s most important centers for wine production. On land that was originally covered by the sea – as the presence today of yellow sands and fossilized seashells testifies – one finds the vineyards and olive groves of Fattoria Abbazia Monte Oliveto.
This is aterroir whose growing conditions are unique, and which is characterized by a climate that is mild in winter and with considerable differences between day- and night-time temperatures in summer, thus favoring the production of wines that are particularly scented and intense.
The espalier training system known as Cordon Spur, with a plant density of 4 thousand vines per hectare, allows the estate to produce two types of Vernaccia di San Gimignano D.O.C.G., both of which are vinified as single-varietal wines. The first has a straw-yellow color with very faint greenish highlights and scents of flint, fresh fruit and just-picked flowers; the second,Gentilesca, is acruwith a well-defined, forthright character, considerable structure and floral notes, which take on mineral nuances with time in the bottle.
There are also four varieties of olives grown on the lands of the estate:Frantoio, Leccino, Moraiolo and Pendolino.
The present-day winery, which is entirely underground and whose colors are in perfect harmony with those of the surrounding Tuscan countryside, was built in 2011. It is here – using traditional techniques – that the grapes from the Estate’s own vineyards are vinified.
The vinification process for Vernaccia di San Gimignano, the wine that enchanted famous personalities such as Lorenzo de’ Medici and Ludovico Maria Sforza, follows the simple rules for obtaining fine white wines: harvesting by hand; transferring the grapes into the press by gravity, without the use of pumps; soft pressing; and constant control of the temperature during fermentation. Maturation of the Vernaccia takes place in stainless steel tanks, whereas for La Gentilesca it is also carried outpartlyin 225-liter oak barrels. Then, once it has been filtered, the wine is bottled, no earlier than seven months after the harvest.
The wine shop adjacent to the Estate, which has a sizeable car park, can be reached on foot in just a few minutes from the center of San Gimignano. Here wine lovers and gourmets can taste and purchase the wine and olive oil that are produced and bottled on the Estate. Tastings are guided by the wine shop staff, who will be able to advise you and answer all your questions.
